Last Day Cakes!

Tomorrow is my little sister's last day at school for this academic year. Next year she is going to be going into year 3, her first year of the juniors, my gosh, she is growing up so fast! 
So today, her class is having an end of year party, for which, she needed to bring in cakes. Originally, my Dad was just going to buy cakes until he came into the living room asking if I was meant to be making any, as if I'm meant to make cakes for every single party that happens. I should start charging that school for all the cakes I make for it!

But anyway, here is the recipe for:

Double Chocolate Chip Cupcakes

Recipe:
225g unsalted butter (softened)
225g caster sugar
225g self-raising flour
1 tsp baking powder
4 eggs
2 tbsp cocoa powder
100g white chocolate chips (and some extra for decoration)
Butter (for butter cream)
Icing sugar
Vanilla Essence

Makes 18-20

Method:
Preheat oven to 180C
1.
Add you unsalted butter, caster sugar, flour, baking powder, eggs and cocoa powder in a bowl and whisk together (with an electric whisk) for about 3-4 minutes, or until all the ingredients are combined.

Add the chocolate chips and stir them into the cake mixture.

Spoon it in to the cake cases and place in the oven for 20-25 minutes.
4.
Once removed from the oven leave to cool for half an hour.
5.
In the meantime, you can make your butter cream. Combine some softened butter with icing sugar and cream together until it has a light and airy consistency. Then add in some vanilla essence and mix in.
6. 
Once the cakes are thoroughly cool, add the butter cream to the top and decorate with the remaining chocolate chips.

Originally I tried whisking all the ingredients together manually, however it was just not working, so I gave up and got out the electric whisk. Abbey and dad then got to eat the cake mix off the whisking things and I got the bowl, hell yeah!
Abbey says:
"Lovely,  pretty,  the cake on its own was nice, the icing was nice as well and the chocolate chips were lovely looking on the cakes."
When I went to pick her up there were no cakes left, so they must have been good, it was a shame because I'd have quite liked one, but never mind, I'm sure I could  make then again!
