When Life Gives You Lemons...Make Cupcakes!

If you ever joke with me that I should make you cakes, the odds are that I will make you cakes at some point or another. So when my friend said I should make him cakes, guess what? He got CAKES!
However, deciding what cakes to make is always a bit of a dilemma, as obviously I want my skills and ideas to grow and generally I want to prove that I can cook/bake!

So here is the recipe for:
Lemon Drizzle Cupcake Surprise

(My Mum is slightly in love with these cakes, I was under strict orders to bring home the cakes that we didn't eat. Surprisingly there was two left, but to be fair we didn't eat dinner until 11pm. However, that still means we had 3 cakes each, which is rather a substantial amount of cakes really.)

Ingredients:
100g Softened Butter or 4 tbsp and how ever much you want to use for butter cream
100g Sugar or 4 tbsp
2 Eggs
About 150g of Self-raising flour or 4 heaped tbsp
Lemon Juice
Lemon Curd
Icing Sugar


Method:
Preheat oven to 180C

 Add the 4 tbsp of butter to a large mixing bowl, add the sugar and butter and cream together.

 When it's all creamed add the 2 eggs and mix together (it looks a little gross at this point)

Add your flour and mix together. The mixture will start to look like cake mix, it make look a little thicker, but that's fine!).

Add some lemon juice.
5. 
Put the mix in cakes cases (this mixture makes about 12)
6. 
Put the oven for about 20 minutes, they may need another 5 minutes, but just make sure to check on them
7. 
In the meantime you need to make the butter cream. You do this by adding your butter and icing sugar together and creaming, I added a little lemon juice too.

In this time you will also need to make your lemon drizzle. Add icing sugar to a clean bowl and our in lemon juice, and mix together until all the icing sugar is dissolved, if it's too runny add more icing sugar, if it's too thick add more lemon juice.

When the cupcakes are book, remove from oven and allow to cool for a few minutes.

Get a sharp knife and cut a circle in the top of the cake, do this while it's still warm.

 Once they have completely cooled, you need to spoon out a bit more of the middle of the cakes so there is room for the surprise!

 First into the hole add a teaspoon of lemon curd than fill the rest of the hole with butter cream.

Add the "tops" (the circles you cut out, this should just be a thin layer of cake) back on to the cake and drizzle the lemon drizzle over the top.





My mum loved them so much that I've had to make a second batch this afternoon, they are cooling as I type this. She is also constantly teasing her friend, because we have cakes; evil much!
I actually can't wait to eat them. Nom Nom Nom!
